WHY I’M EXCITEDFIELD NOTE / CARLOS SUAREZ
Lately, I’ve been having a lot of fun making French food. I’ve been reading a lot about it, learning new techniques and building food around those techniques. This pop-up is going to be so much fun.
I met Lauren after one of my first pop-ups at Bummer on Rainey. Now we’re both back on Rainey. Was that 2022? 2023? Maybe 2020? Hahaha—oh shit. A long time ago.
I love Lauren. I love what she brings to the kitchen: nothing but a good attitude, a lot of hard work and so much fun. Lauren puts a ridiculous amount of work into steak nights—seriously, mad respect. A truly BIG DAWG! She also makes the best burritos and burgers. I don’t trust anyone else with mine, especially after she made that fucking 25-pound burrito.
Matty—Big DogDawgDogDawgDog. Thanks, Matty, for letting us use the space. I love Matty. I’ve known this guy for quite some time; we go all the way back to when I had El Tigre Coffee, so long ago. I remember us sharing coffee stuff and talking about other stupid things. I love chatting with this guy. Really cool. Really wholesome.
Will is playing some good music. I love Will. Who doesn’t like Will? Such a sweetheart.
This pop-up at Larry’s isn’t exactly French food, haha. I mean, we’re making BigMac tartare. It’s more about the techniques, with a few French ingredients here and there. We wanted to keep the menu really fun and super easy—nothing complicated, just really tasty food.
AND GOOD TUNES
